I know trading ships are not the best for dogfighting, but often I need to fight - usually when my trade lane gets disrupted!

My strategy is to run, while using the turrets to cover my escape.

I would like to engage the Goto so that the auto-pilot can avoid obstacles.

Is there any way to use Goto without it engaging the Cruise and disabling my guns?

Yes, just use goto then Shift + W to disable cruise (alternatively click the button underneath goto).
